Next time you dive into that salad with all the trimmings—the one salad you freaking love that hits you with flavor so hard you can't help but devour it fast—you know the one I mean. Tasty AF, the kind of dish that makes you want to run your fingers around the bowl, scraping for every last bit as you fish those last mouthfuls. I'm talking about that irresistible creation you can’t live without from that special spot you love to eat at in Bali. The ultimate flavor bomb, of the goddess variety, and you just can’t get enough of that old chestnut ;)
My question to you, my dear reader, is this.
Do you ever count the calories on that piled-high epic bowl of salad glory that you love?
Or.. Maybe you're a protein nut and you're so committed to getting the exact calculation to the exact amount of protein, just so you know, you know? Or... Are you one of those nerdy human types (like me) that can’t help but look down into a bowl of your favorite salad and wonder how many times each ingredient was sprayed, soaked, or dipped? Ingredient names—pesticides, herbicides, and fungicides? Mmmmmm, I wonder Mmmm (me wondering)

Food from nature or a double-edged sword, tainted by modern farming practices, eh?
Oh boy, my mind starts to spin, I reflect on the wild conversations I've gathered over the last 30 years, humanity, and how we farm our food for a very protein-hungry planet.
Back to the meticulously displayed salad on a plate—I pause, reflect on the chemical shit show looking back up at me, doused in who knows how many and what types of pesticide. "I hope this conveys the tone of what I'm expressing."
Originally, farming was primarily about growing crops and raising animals to meet basic needs for food. In 2024, the challenge of farming to feed a rapidly growing planet is part of a broader conversation about the social, economic, and environmental factors shaping our choices. Despite knowing the implications of our agricultural methods, we still make questionable decisions, like using seeds designed for dependency on chemical companies and roundup seeds that integrate pesticides into their DNA, eliminating the need for additional sprays.
This quiet revolution has shifted from concept to reality—and it demands our attention.
This isn’t just food; it’s a testament to our world—a brilliantly woven tapestry of life’s resilience interlaced with the harsh realities of the industrial food revolution. A time when we, humanity, thought ourselves clever, manipulating nature with seeds that were engineered in labs, stripping away the organic struggle that was once an integral part of farming. Damn, we do stupid shit a lot!!
Today, I write this for both you and me as a reminder of that little BIG white restaurant down Jl Danau Poso called Jhoii Local Eats, where we celebrate the beauty of simplicity and our commitment to serving food grown without harmful sprays or additives. And we pray for the day all our ingredients to be organic or biodynamic, honoring the earth, and its natural cycles.
