Conscious Eating

Writer: Chef Cynthia LouiseChef Cynthia Louise

The most effective tool you have for transforming your inner health is right at the end of your fork—that shiny utensil next to your plate, as if it just hit the jackpot of dining experiences. Who would have thought a fork could be so impactful, right? It's almost unbelievable, especially when you're enjoying a meal with someone special. So, let's take a moment to appreciate the phrase, "Hey, wanna catch up for lunch, dinner, share a meal?”.

I like to take a moment to admire the brilliance of whoever decided that sharing a meal was a great idea. It's a true love affair with care! Sharing a meal is a sensory delight: laughter, flavors, and those unforgettable moments when someone exclaims, “OMG this food, holy shit it's like I am having an organism in my mouth” passionately with hand gestures across the table—I personally treasure those moments, they’re just classic! Seriously, this kind of joyful and LOUD, hand-gesturing eating behavior is what I call “conscious eating.” And this is what our microbes enjoy—alongside prebiotic fiber, of course.

Microbes, those tiny superheroes living in our guts, have their own version of a dinner party every time we eat, especially when we season with laughter & JOY.

Indulging our gut friends with a buffet of colorful, real food, using ingredients with a hearty splash of flavor and laughter, followed by a cheeky slice of Jhoii's really good chocolate cake, embodies conscious eating. I don’t need to meditate, sit cross-legged on a hard floor or mountain and Ommmm myself into being more conscious, no, I don't, not interested in that vibe.

For me, conscious eating is all about loving what I love, doing what feels right in the moment, and being around people who appreciate me for all my glorious quirks, loudness, and imperfections. Why not share a meal and a laugh with those who can see the beauty in this wild ride of being human? There's nothing quite like those unexpected bursts of laughter around the dinner table—that’s the real next level of human connection!

And in saying all of that, there's something special about the setup at Jhoii. For me and Simone Jhoii, the interior feels like an extension of our homes, our living rooms, or internal vibe. And that is a beautiful thing to share with you.
